Benefits of Microgreens

Nutritional Content

Microgreens have up to 40x more nutritional content than their fully mature counterparts! This includes vitamins, minerals, antioxidants, and medicinal compounds. Types of nutrients vary by each microgreen type.
Microgreens have been shown to have cancer fighting polyphenols as well as aid in preventing chronic disease such as Alzheimer’s, Diabetes, and Heart Disease.

Broccoli is a cruciferous vegetable whose microgreens produce a compound called sulforaphane. Benefits of sulforaphane include improving brain function, protecting skin, aiding inflammation, managing glucose levels, and can even cause tumor cell death.

Amaranth

Amaranth is an ancient plant that comes from the same species as spinach, quinoa, and beets. Of 25 common microgreen varieties studied, Amaranth came in the top 4 for vitamins A, C, E, and K-specifically Vitamin K, for which Amaranth has 950% of the Daily Value in 100 grams. Vitamin K aids in bone health, blood clotting, and wound healing.

Kale

Kale, known to originate in the eastern mediteranean and has been enjoyed for its health benefits since 2000 BC,  is a member of the cabbage family and is similar to broccoli. Kale is the highest scoring food on the ANDI scale in terms of nutrient density per calorie. For people who do not like the taste or texture of fully mature Kale, these dainty microgreens are a perfect opportunity to still harness the health benefits.
